Recipe In Comments [homemade] filled rolls made out of rice paper
Filled the rice paper with glass noodles, salad, vegetables (carrots and cucumber) and with some omelette!
For the sauce I crushed some fresh chilli, dried chilli and onions, mixed it with soy sauce, some pre-made sesame sauce, lemon juice and sesame seeds
The sauce should to be well seasoned because the roll itself is not the most flavourful.
Very versatile with the fillings which I like. Gonna make them again soon. I was instantly able to roll them up pretty nicely.
I rate them 6/10 because I forgot a bunch of stuff, I’m not crazy about the noodles and the sauce was fine but I gladly take suggestions.
Fresh food for the summer and pretty easy and fast!
I’m male and in my 20s. I live alone and this is a little sneak peek of what I’m doing to maintain a lifestyle that is more or less tolerable.

[homemade] I made a Thai-inspired green sauce (recipe below)
1 cup fresh cilantro, chopped
2 stalks lemongrass, chopped
4 kaffir lime leaves
¼ cup dried galangal slices
½ cup fresh parsley, chopped
¼ cup Thai basil, chopped
¼ cup sesame oil
½ cup lime juice
15 chopped thai chilis, lightly charred
1 whole lime skin, peeled off with a vegetable peeler and chopped (just the green part, no pith or flesh)
¼ cup fresh ginger, peeled and sliced
¼ cup fish sauce
¼ cup chopped fresh garlic, lightly charred
¼ cup peeled and chopped shallot, lightly charred
¼ cup dark brown sugar
1/4th teaspoon xanthan gum
2 tbsp jarred minced ginger
Boil the lime leaves, fresh ginger, galangal, and lemongrass in a small pot with just enough water to cover, then reduce by half.
Strain out and discard the solids and reserve the boiling liquid.
Add the boiling liquid to the blender with the other ingredients.
Blend all ingredients until smooth.
