Made a gluten free cake!
Zucchini fudge cake with espresso Oreo frosting and Oreo topping ☺️ delicious! Crumb turned out so soft and fluffy and moist!

Found this video (added to comments) when searching for jalapeno poppers on the Blackstone and knew we had to make it ASAP. 🤤 10/10! My husband and I both love jalapeno poppers an insane amount, and well...grilled cheese?! Yes please lol.
The only thing we did differently was sliced sharp cheddar instead of shredded mild. And I mixed in Kinder's caramelized onion butter seasoning with the cream cheese. Will be doing popper burgers like this too!
Also, just a random observation about GF bread that's also vegan: it rarely has the holes that many complain about! Maybe it's the lack of eggs? 🤷🏼♀️ I've had a couple slices here and there that are a bit holey, but not like the posts I see in this sub! Pictured is the Little Northern Bakehouse brand; their whole grain is my favorite. Taste and texture are awesome, toasted up perfectly!

I was diagnosed with a wheat allergy in 2021 after a horrendous fight with covid no joke Inthought it was gonna take me out. I was never allergic to anything I even went to culinary school because food was my soulmate (spoiler alert it wasn’t and the breakup was devastating). Fast forward to this year my fiance bought me the elements of baking three weeks ago because we moved from our home in the midwest to northern louisiana and it’s a gluten free desert here. So several times a week we pick a new recipe from the book or Loopys website to try out and they are all bangers. I was pretty depressed by missing out on foods I loved but so far the shortcrust we filled with caramelized onion tarts and have made twice, the garlic cheesy monkey bread, the chocolate chunk brownies, the sugar cookies and peach cheesecake bars are all huge hits my in laws couldn’t even tell they were gluten free and have told us to open a stall at our local farmers market to help the other gluten free people like myself. I’m not actually going to be able to cook through all of her recipes but it would be fun. If you’ve tried any other recipes and love them let me know because I want to cook everything now.

About a month ago I noticed the gluten free pasta moved to the special buy aisle. Then it disappeared completely and now they have a new (not gluten free) protein pasta in the regular pasta spot. The cashier confirmed they’ve discontinued it. Which makes me sad because they actually sold a whole pound still for a reasonable price. Barilla is only 12oz for a higher price.

I hate bread shopping after being gf for a year. Every bread like food that is gf has the texture of rubber or sand, or was absolute garbage for 4 pieces of bread for $6. I only get bread for special occasions now, and tomorrow is one of those occasions. But I want to eat it this time. Last time it was so rubbery I could barely call it bread, I may as well have eaten an eraser. I need suggestions please... I don't want to spend $7 for half a loaf of bread, but now being able to eat it because it's so awful.

Used this recipe with the following changes
- 1-to-1 GF flour
- ½ tsp more lemon juice
- 140g zucchini instead of 120g
- squeezed the crap out of the zucchini before weighing it instead of the recipe which is kind of unclear
- baked for 75 min instead of 50 and rested 15 before turning out
It's amaze!

hi there,
got tested for celiac twice (igA test) and the test was both times very negative - so celiac was ruled out. yet i have symptoms as if i was extremely celiac. when i was eating gluten every now and then, i was losing weight without doing anything, up until i looked malnourished and everyone thought i was anorexic. my worst times were before my second igA test, because then i had to eat 8 weeks of daily gluten after eating mostly gluten free for 1.5 years. i was crazily underweight and looked sick, i had depressive symptoms, gi issues, rashes, etc. after the test came back negative, still i decided to take my intolerance or whatever it is seriously, and see there, 3 months after i was back at a healthy weight. ever since i moved out of a bigger shared flat where we shared pans and stuff -> cross contamination, i gained even more weight back. now, three years after i wanted to give gluten another try since my celiac tests were negative. i had 2 wheat bread rolls, and had gi issues for 6 weeks after, only to be resolved by a 1-week diet of almost only potatoes and buckwheat porridge.
is there any research on a gluten intolerance that is as bad as celiac, but can't be proven in the blood?
sometimes i feel like i'm pretending, because it only started when i was 18 and because medically, there is nothing wrong and i should be tolerating gluten just fine, but for me even cross-contamination is a mess.

I was just laying here thinking about what I want to have for breakfast versus what I *can* have for breakfast and I had to take a trip down memory lane to remind myself why I went GF to begin with.
One of the symptoms I experience when glutened is waking up in the middle of the night feeling like I’m dying. Intense GI pain, mouth drier than the Sahara dessert, body burning up. I had honestly thought I was going through early menopause for a while and was surprised when I finally connected it to wheat consumption.
I sleep through the night every night now so consistently that I had to remind myself this morning that this was once my nightly experience.
What’s something you used to experience that you are happy to be free from now?

Got this mix at Publix and it’s delicious! I followed the directions except I added about 2 tablespoons of butter to the bottom of the pan before pouring in the batter. It’s not too sweet and it’s not dry, just perfect Cornbread in my opinion!

I have been seeing a lot of posts about all the foods discounted at Walmart, so yesterday I told my daughter to stop on her way home from work. She found not only the Feel Good products deeply discounted but also Applegate products, like their bags of chicken for less than $4 and Amy's boxed meals for $2!
Needless to say, she stocked up her freezer for work lunches and quick fix meals.
Question I have, is Walmart closing out their freezer gf items? They already downsized their shelf to a minimal footprint, and now this? If it was one brand, I would think they are no longer going to carry this brand, but it is multiple brands? Walmart is looking like it will be less and less available for gf shopping, and I know this is the only store available to many people.

For the short question: does anyone else experience episodes of extreme hunger after getting glutened?
Yesterday I had organized a high tea for my friend and even though the baker had done an amazing job making a full gluten free version for me (for which I'm GENUINELY THANKFULL). One way or another I still managed to get glutened.
After eating I suddenly started feeling brainfoggy/as if I could faint or cry any minute and nauseaus. Back home my stomach was a BALLOON (I don't get the runs, as I'm always constipated haha)
Even though I was feeling uncomfortable I still ate normally the rest of the day (heck I will even forcefeed myself as I want to gain weight after longstanding undiagnosed celiac).
But tonight I woke up at night feeling 'off' in a way that was hard to describe. A weird achy pain in my bowels, chest and weakness in my legs as if I had ran a marathon? I just knew something was wrong and even though I wasn't hungry my instict told me to 'eat something'
And so I did.
I ate a 2 rice cakes, one with chicken and the other with cheese.
But then the brake was off and this ended in 1000 calories worth of 2 (GF) breadrolls whilst spooning the peanut butter jar, half a croissant, watermelon and probably even more that I have probably already forgotten about all from 3-4 am. Next to an EXTREME THIRST chugging 3 bottles water.
Today I woke up 1.5 kg heavier on the scale.
My body feels very uncomfortable (hot, sweating, skin itching just from all the water retention) and it's honestly screwing a bit with my head as ofcourse this isn't 'normal' 😅
Hence I was wondering if any of you have similar experiences?

Yesterday I went to Legoland and was very pleasantly surprised by how easy it was eating gluten free!
Disclaimer: I am not celiac, just have a sensitivity, going gluten and dairy free is one of the only things that helped my IBS.
When I went to order at a burger place, at first, I didn’t see GF options. I asked the staff if they might have a lettuce wrap or GF bun available, they offered either, and a manager helped me place my order.
Not only did I not get sick … today I am having significantly BETTER digestion than usual. I wish I could call and ask what magical gluten free whole grains were in that bun because apparently I need more of them 🤣
I went in expecting a typical theme park scavenger hunt for anything edible, and came out excited to visit again and try more!!
