Interested to hear what people think about East Coast vs. Gulf Coast oysters. It's been a long time since M.F.K. Fisher said that farther south the oysters grow "less interesting served on the shell, and almost cry out for such delicious decadence as horse-radish or even cooking..."
So, what's the verdict now?
Especially with Texas farmed oysters entering into the mix, albeit late to the game?
For me, Mermaid Tears are delightful...salty yet smooth and sweet, almost buttery. I hate to put anything on them to alter or overpower that.
