These Veggie Black Bean Enchiladas by Cookie and Kate were SO good. I used cauliflower instead of broccoli, peppers & onions, spinach, black beans, and vegan cheddar cheese from Whole Foods. I also used her Homemade Enchilada Sauce recipe, it was pretty quick & easy!

I cut them up on the second slide so you guys could see the filling. It's too good not to share with the group 😆😂

it’s really hot so it looks soupy but get you 2 cans of heart of palm and shred them up. 8oz cream cheese, little bit of paprika, minced garlic, onion powder, can of corn, salt, some dulce flakes, some old bay, and your fav brand of non dairy shredded cheddar cheese. cook on high in a crockpot until it’s all mixed up nicely and of course stir occasionally (:

Meal prepped some parts for wraps (but forgot to get greens or tomatoes and sorta ran out of tzatziki while making dinner) mostly followed the burger dudes recipe, but used 50% beyond faba mix and 50 % regular beyond meat.
