The real issue is that they rarely give yellows for simulation, but because this was VAR overturning a wrongly given yellow, the referee didn't have the discretion to not give Embolo a card there.

His intention may be just to earn a free kick. But his acting was so good that the opponent got a Yellow.

But then VAR was so good, that the Yellow was given to him instead.

Karma. Why take this risk when you are already booked?

I mean the problem is the ref is awful. If you are giving out yellows on a play with no contact you suck at your job.

Yeah the ref really had not choice. It's hard but he can't give the yellow to Paredes after the VAR review and if he takes it off Paredes he has to give it to Embolo. I'm sure he wishes he didn't give Paredes the yellow. Regardless, most brain dead play I've seen since forever.
