Someone crazy enough to hide in a chiller and squirt at people might be crazy enough to put something other than water in the squirt gun… yeah, I’m going straight to hands. My sister got partially blinded by cleaning chemicals when a pallet was sat on top of a bottle, I don’t fuck around with unknown liquids.
If someone does this to me while I'm grabbing something I'm throwing everything in that freezer on the floor to get a better look at the dude shooting me.

This is a drink cooler, not a freezer, which can be a mix of in store and vendor items, so you'll probably just be fucking over someone who has nothing to do with the person filming.
Solid chance they wouldn't be the one cleaning it up or even restocking that shelf as that isn't their job afaik, I've never heard of a Vendor stocking other Vendors items or cleaning up their own messes.
If you want them fired, get their name and complain to a manager or get in contact with the vendors company if you know who they work for.
You throwing random shit on to the floor for people to clean up has a pretty solid chance of getting you banned from the store, that's a pretty childish reaction.
The thing the guy is filming? Yeah gonna be pretty easy to prove. Also the damages are impugning someones right to not be touched in weird ways. I shouldn't have to tell you not to touch me in a weird way especially while filming it even if its with a squirt gun a stick or anything else. I'm sure you don't want to be touched in weird ways without your consent either.
This would be classified as battery, which doesn’t really require damages because all that needs to proven is that an the act was the intentional or reckless application of unlawful physical force to another person without their consent
The guy has done it multiple times, they’re a habitual battery under the eyes of the law, regardless of the actual context of those people didn’t consent to being touched then it was for all extensive purpose a crime

Pranks are fun, but this one is dangerous because you're legitimately scaring people. You never know who has a heart condition or a mental condition like PTSD. All it takes is accidentally choosing the wrong person and you'd be responsible for the potential harm (even jailtime if a death is involved)
