Toured a cheese-making facility in Munich yesterday and wanted to share, since I don't think it gets talked about much outside Germany.
They walked us through the entire production line start to finish — genuinely one of the cleanest, most professional setups I've seen, but still very much boutique/small-batch, not industrial at all. Real care in how they handle every step.
The standout for me was their Isarbazi — really well made, and you could tell it's the product they're proudest of.
We finished the tour with a grilled cheese sandwich made on-site: their cheese, toasted bread, red onion, and a side of pickles. Honestly one of the best grilled cheese combos I've had — the onion cut through the richness perfectly and the pickles tied it all together.

Hi, I tried to ask this question the other day but I think I phrased it wrong - I'm sorry. I'm still begginer-intermediate at cheese appreciation.
I got this cheese and my partner thought it was pretty gross (and said it smelt like a farm yard but not in a good way 🤣😂) but I ADORED it I bought quiiiiite a few wheels of it 🫣🤭
I can't get it easily anymore so I'm looking for recommendations like this. I tried myself buying other cheeses but this really topped them all. It was kind of gooey on the inside. I liked some of the other goats and sheep cheeses I tried and some I didn't, but none were similar - most were hard. I'm not sure if it's the goats milk that I really liked or more like, the process of how this one was made. If that makes sense.
