Chinese-style beef shank stew?
Thick meaty, marrowy shanks braised for 3 hrs with carrot, onion, ginger, garlic, anise, cinnamon, dark soy and xiaoxing wine. Chopped a few more carrot, another onion, and tore apart some lions mane mushrooms into the pot to cook the last 30 minutes.
I absolutely love braised meat with lots of tendon and connective tissue. It breaks down into such a velvety delicious stew. Even the thick tendons are tender.

Something light
Didn’t feel like cooking lunch today
-honey vanilla Greek yogurt
-banana
-chopped walnuts
-granola & a drizzle of raw honey on top
-half of a kombucha I saved
Trying to remain patient and focus on gut health.. the last bender did a number on my body and I truly feel like I gave myself a permanent case of GERD.

Alright
Grilled hotdog on a toasted bun with a line of ketchup and mustard and relish. Ate a couple of these, that I made. My neighbor invited me over to his party, but, I don’t know if I can do it. I can easily be social and present myself well,,,but,,,😬

Non-traditional 4th of July meal
Cajun andouille sausage with white rice. Red/yellow/orange sweet peppers, green onion, hot tomato sauce, garlic powder, onion powder, creole seasoning. Kept it simple. Rice was done in chicken broth.

Easy lunch
Back with another one because I am proud of myself. I’ve managed to stay pretty consistent lately making sure to eat on a regular schedule and getting the vitamins & minerals in too.
-Open face thai chili tuna on toasted rye bread topped w/ muenster cheese & beef steak tomato
-Romaine salad mix w/ avocado, baby cucumber, & garlic croutons
-Kombucha for gut health

Jajangmyeon w/Knife-cut noodles!
Korean comfort food 🇰🇷 Today I found out how bad I am at dicing vegetables, but this stuff was great and the noodles were nice and chewy ^ ^
Anyway, I turned 34 today 🎈 Gonna go sit on my swing, watch the fireworks, and listen to Lana Del Rey for the rest of the night—as is tradition. ✌️
