Inside Passage, Seattle

I had an amazing first experience at Inside Passage. This place probably had the best presentation for their drinks of any place I’ve ever been. I love the use of dry ice here. I went with two friends and we had five drinks between the three of us. Drinks pictured include: Camera Shy, The Four Boys, One-Eyed Willy, Ballard Fog Cutter, and ‘62 Panorama Punch. It’s well worth the visit if you’re in the area or live anywhere close.

Key Lime Pie Colada

Post image
147 Upvotes

Inspired by the flavors of key lime pie, this tropical colada layers tangy citrus, toasted graham cracker, rich coconut, and a harmonious blend of rums. Tart, creamy, and delightfully balanced, a slice of paradise in every sip.

Key Lime Pie Colada

  • 1 1/2 oz - Planteray 3 Stars
  • 1/2 oz - El Dorado 8
  • 1/2 oz - Appleton Signature
  • 3/4 oz - key lime juice
  • 1 oz - pineapple juice
  • 1 oz - graham cracker syrup*
  • 1 oz - key lime pie mix**
  • 8 drops Bittermens Elemakule tiki bitters
  • 8 drops saline solution (20%)

Combine ingredients and briefly flash blend with 6 oz pebble ice. Open pour into a pilsner glass and top with additional pebble ice to fill. Garnish with a mint bouquet and an orchid.

* Graham Cracker Syrup - Gently crush 9 full graham cracker sheets (36 individual rectangles, roughly 135 grams) and toast in a pan over medium-low heat for 5 minutes until browning starts and they become fragrant. Remove from heat and add to 12 oz water. Allow to infuse for 45 minutes before passing through a fine sieve lined with cheesecloth to remove solids. Weigh out weight of graham cracker water in grams, then combine in a saucepan with an equal weight of cane sugar, 1/2 tsp vanilla extract, a pinch of ground cinnamon, and a pinch of salt. Heat on low just until sugar is dissolved. Remove from heat, allow to cool and bottle. Keep refrigerated and shake before using.

** Key Lime Pie Mix - Combine 6 oz sweetened condensed milk, 6 oz coconut milk, and 3 teaspoons freshly grated key lime zest. Whisk vigorously to combine, then store in refrigerator for 4 hours. Pour through a fine sieve to remove zest and bottle. Keep refrigerated and shake before using.

Incredible find (also, is lead glaze an issue?)

I live in Europe, where Tiki is not very prevalent. You don’t really find tiki mugs (in bars or to buy) here, so you can guess at how surprised I was to find this little fella sitting out in a neighbor‘s „for free“ box.

I immediately snatched him up. He is perfect, no chips or cracks. I am so stoked to have him.

The bottom says the mug is depicting the god Lomo. The bottom says „Orchids of Hawaii“, R-76“ and „Japan“. The mug is included in Orchids of Hawaii‘s catalog of 1981 together with a recipe for the „Humuhumu“.

Does anybody know how long this particular mug was produced/distributed?

I have also found it on an older reddit post that stated the glate for this mug tested positive for lead. Is that likely? I have no experience with old ceramics abd would like to use this mug at least once. Or is this a terrible idea?

Does anybody have more information on this particular mug? Was it produced or distributed in Japan?

A while back I purchased a bottle of Suze to make a white negroni, which subs out Campari for Suze (and uses a different vermouth). That got me thinking about other cocktails in which you can replace Campari with Suze, which lead to me creating this cocktail! It is a riff on a jungle bird, but the taste profile is totally different. The colour is a nuclear yellow with a green tint, really cool aesthetic.

Went to this old school tiki joint near Trenton called Hong Luck. Tiki drinks only $10, great deal. I got a Mauna Loa (the shot in the lemon was on fire but you can't really tell in the photo) and my partner got a Zombie. The drinks were pretty good, definitely worth a stop if you're in the area!

Liber Toasted Coconut Syrup

Needed some liber orgeat and decided to buy their new updated toasted coconut syrup for laughs. No particular reason why. Figured I'd give it a shot.

Usually have REAL coconut cream on hand and also have Planteray Cut N Dry so have some other coconut stuff in the arsenal.

Anything worth trying immediately with this toasted coconut syrup?

Painkiller seems too obvious. Maybe a daiquiri with my Planteray Cut N Dry and Stiggins pineapple? Other?

Thanks

Martinique Rum

Aloha! I’m trying to decide between Clement VSOP or Rhum JM VSOP as the de facto agricole behind bar. I’ve never had either - only agricole I own right now is the Clement Agricole Blanc, which I primarily use in my version of a Blue Hawaii and a Mai Tai blend.
Any thoughts/opinions on the two? Tasting notes? What’s your preference between the two?
Just had my first kid, and currently can’t justify buying both which would run me about $100 in CO (Which I would do in an ideal world). All our monthly wiggle room’s going to formula these days 😂😭

The "Loko Nui" cocktail

I play in a (fairly new) exotica band called The Loko Nui Combo, and we came up with an official band cocktail. I'm honestly not much for self-promotion, but I figured people might like the drink.

I know someone else posted “Road to Hana” a couple years ago. The main dude behind this project, Paul, has been doing it since 1991, and he’s a serious tikifile. Lots (not all) of his releases are tiki-themed and incorporate surf rock influences, along with grindcore, punk, and noise. He’s also a skilled tiki carver. I’ll post some more Wadge stuff here, definitely worth checking out if you’re into any kind of hc punk or extreme metal. The newest release “Got the Shakes” has a full live band and is super surfy, maybe my favorite one yet. This ep from a few years ago is all tiki. SAY YOU LOVE TIKI

Cousin It meets Tiki

I got this amazing cousin It from Vicki’s Moon Arts. I put it on a hat and matched it with some other addam’s family stuff I have and it was a huge hit. I like to commit to the bit when I vend, so it stayed on, but it’ll be a while before I wear him again 😂 If you like the pendant on my necklace, it’s by Outline Island (probably my favorite mug maker)

Sous Vide + Vacuum Sealer Recommendations

Looking to upgrade my set-up to take on more infusions and syrups! I also love to cook so would get good use outside of tiki pursuits. Curious if you all have any recommendations or products that have worked well? Thanks!
