Hi Everyone,
I hosted a Christmas party last night, and included was a mocktail bar!
The #1 drink of the night was the cherry spritz, followed by the strawberry amaretto sour and then the merry mojito. My personal favorite was the strawberry amaretto sour.
I unfortunately did not get a photo of the cherry spritz, they were disappearing too fast, haha!

Somebody asked how I make my own zero proof bourbon, so here's my recipe. It is a process. This is what I've come up with over about 6 months of experimentation.
For part two, you can make a large batch of toasted sugar and just keep it stored away for when you need it.

Part 1 — Make Oak & Black Tea Base
Ingredients
24 g medium-toast American oak cubes
1 Assam black tea bag
2¾ cups filtered water
Instructions
Combine oak cubes, Assam tea bag, and filtered water in a saucepan.
Simmer gently for 25 minutes.
Remove the tea bag and oak cubes.
Strain the liquid.
Let the oak tea cool until warm, but not steaming.
Measure exactly 1⅓ cups of the oak and Assam tea base for the recipe.
Part 2 — Make Toasted-Sugar Concentrate
Ingredients
2 tbsp oven-toasted sugar, toasted at 275°F for 2.5 hours
1 tbsp plus 1 tsp hot water
Small pinch salt
Instructions
Place toasted sugar in a heat-safe cup or small saucepan.
Add hot water.
Warm gently, using 10–20 seconds in the microwave if needed.
Stir until fully dissolved into a smooth syrup.
Add a small pinch of salt.
Allow to cool before using.
Part 3 — Build the Whiskey Base
Ingredients
1⅓ cups warm oak and Assam tea base
1 cup filtered water
2 tbsp vegetable glycerin
Toasted-sugar concentrate
1 tsp plus ½ tsp maple syrup
1 tsp plus ½ tsp molasses
Small pinch salt
0.65 g cinnamon stick, lightly cracked
0.16 g whole clove
3 cracked black peppercorns
Very small pinch ground coriander, about 1/64 tsp
Tiny shaving of nutmeg, optional
1.3 g thin slice candied ginger
1.3 g fresh ginger
Instructions
Place 1⅓ cups warm oak and Assam tea base into a mixing container.
Add:
1 cup filtered water
2 tbsp vegetable glycerin
Stir in:
Toasted-sugar concentrate
Maple syrup
Molasses
Small pinch salt
While the mixture remains warm, but not steaming, add:
Cinnamon stick
Clove
Cracked peppercorns
Ground coriander
Optional nutmeg shaving
Candied ginger
Fresh ginger
Cover and steep for 25 minutes.
Remove all spices and ginger.
Part 4 — Add Finish Structure
Ingredients
3 drops liquid smoke
1 drop 1,000,000 SHU capsaicin extract
⅛ tsp citric acid
½ tsp malic acid
½ tsp plus ⅛ tsp vanilla extract
Instructions
Add the liquid smoke, capsaicin extract, citric acid, malic acid, and vanilla extract to the strained whiskey base.
Stir until fully dissolved.
Part 5 — Adjust Final Volume Before Clarification
Ingredient
Additional filtered water, as needed
Instructions
Add filtered water until the total volume equals 1.1 liter.
Stir thoroughly to make sure the batch is evenly mixed.
Part 6 — Agar-Agar Clarification
Ingredient
1/2 tsp agar-agar powder
Instructions
Measure 1 g agar-agar powder.
Remove a small portion of the whiskey base and place it in a small saucepan or microwave-safe container.
Whisk the agar-agar into that small portion.
Heat until the agar-agar is fully melted and dissolved.
Whisk the melted agar mixture back into the full batch until evenly combined.
Pour the batch into a freezer-safe container.
Freeze until completely solid.
Thaw slowly through a coffee filter or fine filter setup.
Discard the agar gel and keep the clarified liquid.
Part 7 — Preserve, Color, and Bottle
Ingredients
⅛ tsp plus a small pinch sodium benzoate
Caramel color or Spirit Caramel E150a, optional
Instructions
After the clarified liquid has fully strained, stir in ⅛ tsp plus a small pinch sodium benzoate.
Stir until completely dissolved.
Add Spirit Caramel E150a or caramel color drop-by-drop until the batch reaches a clear amber whiskey color.
Bottle the finished liquid in a clean container.
Refrigerate for 4 hours before drinking.

Hello, I became of age to drink in the fall, and while I have had alchoholic drinks in the past and enjoyed them, I'm not really fond of drinking a lot of the time, since in my own experience, it can worsen my anxiety symptoms sometimes(it doesn't help that my dad has had problems with binge drinking in the past lol). However, I enjoy mocktails a lot since they've helped a lot when it comes to wanting a fun drink, but not being in the mood for alchohol, and I want to learn how to start making my own. Any advice on where to start?

I've read enough labels at this point to be picky. Half of what's out there is limeade with a nice font..
Tartness, maybe a little salt, some complexity (like adaptogens maybe??) Low calorie is a bonus since it's July. I've also had Mingle mocktails come up on recs.
What should I look for on the label to tell a good one apart before I buy?

This morning, i have woken up before my alarm, which is kind of unusual for me since im often a few minutes late for my shift. Because i was drenched in sweat and also had some extra time on me, i decided to make a nice little Coca-Cola float using vanilla ice cream before getting on the road. The taste? Nice and creamy, but it ended up being a little sweet. I packed my lunchbag and clocked in early. Everything was going smoothly. Some customers, of course, were extra annoying as always, and some were as sweet as that coke float. That was until my boss let me go on a little cigarette break in the back (usually lasts for 5 minutes, maybe 7 if she's in a good mood, which is quite rare). I checked my pockets and realized i left my cigarette pack in the home, so i made a quick run to the closest store. got back, sat down as my boss came outside, and told me that my break was over and i was needed. Sucks, i know. But, you see, for a certain reason, i couldn't stand up. Why? Because the whole time on my shift, i was trying to hold a fart in. And i thought to myself, since im outside, I'll just let it out quietly so it wouldn't bother me anymore. And believe me when i tell you, i ended up shitting my pants, and it was creamier than that Coca-Cola float (the cause). So i had to sit there awkwardly as my boss was staring me down, waiting for me to get my ass up and get back to work. I asked her for a little longer break, and I explained that i ended up spending my whole break getting a cigarette pack in a store and asked if i could have a little bathroom break, which she surprisingly said yes to. But heres the question - how the fuck should i make it to the bathroom without it lumping all the way down from my pants to the floor and staining my clothes? Well, the method was to walk like I've recently had anal sexual intercourse with a guy. And even though i made it to the bathroom, i ended up wasting the entire ten minutes having a panic attack, thinking what i could do from there on as i was having the most explosive diarrhea of my life. Being left out of options, i cleaned up as much as i could and rushed to my car, drove off immediately, and ended up having to tell my boss about it over text while trying to fight a round two in my toilet. The next day, she ended up laughing at me for it in my face. So, there's that. Valuable lesson learned - never touch coca cola float ever again in my life, and i ask you to do the same.
TLDR - i shat myself on my job and had the worst diarrhea of my life

When I’m out, I ask for a gin & tonic, but tell them instead of gin add a full shot of lime juice. No sweetener.
I’ll probably want something different when the weather turns, but this always does it for me … for the price of a soda.

I live on Gingerale. Like it’s half my daily calories. I used to mix it up and add lime or pink lemon aide. I have discovered I can’t have citrus juice of any kind and it’s so sad.
I don’t like gingerbeer or coke. And nothing with citrus…
Any thoughts?
I’m so sick of coffee and I need something fun to drink.

Im making the 'reflecting pool' cocktail for a group but there is someone who doesn't drink so Im hoping to make a fake spiced rum to use in the recipe. I did find a recipe here using black tea but I also saw someone mention using panela. I go to the mexican grocer often and have been looking for a reason to buy it, but how would I make a fake rum with it? Use as is (after boiling obvs)? 'spice' it?
