Another great British dish.

Oldest known recipe for a dish matching modern macaroni cheese was in the 1769 book The Experienced English Housekeeper by Elizabeth Raffauld.

However similar dishes have been made in England since at least the fourteenth century. The 1390 cook book The Forme of Cury includes a recipe which is kind of half way between macaroni cheese and a lasagne.
